Our son loves chicken nuggets but I have a really hard time buying a bag of frozen chicken nuggets at the grocery. They feel so unhealthy and the nutrition label is full of long words that I can't pronounce. I found a great recipe that we use frequently. The best part, my husband and I both love them too!

1 1/2 lbs. skinless, boneless chicken breasts
1 c. breadcrumbs
1/3 cup parmesan cheese
1/3 tsp. salt
1/2 tsp. pepper
1 tsp. basil
1 tsp. oregano
pinch of cayenne
1 egg
1/4 c. milk
Spray canola oil
-Preheat oven to 400 degrees farenheit. Place a baking rack on top of a cookie sheet and set aside.
-Cut the chicken breasts into 1 1/2 inch pieces.
-In a shallow bowl, mix the bread crumbs, cheese, salt, herbs, cayenne, and pepper.
-In a separate bowl, mix the egg and milk.
-Dip the chicken into the milk mixture and then into the dry. This can be repeated again if you prefer a thicker breading which is what we like.
-Place the chicken pieces on top of your baking rack and bake 15-20 minutes.
-Take the chicken nuggets out and spray with canola oil. Place them under the broiler and cook for an additional 2 minutes until golden brown on top.
-Serve with marinara sauce.
